My husband loves this one. And, if I don’t make it for some time, he will start ordering it when we are out.
Just a note: the tricky part to this is estimating how much kangkong is enough for for your serving. 1 pack of kangkong from the market, could be more than 1 pack of kangkong from supermarkets like Fairprice and Cold Storage. So, if you’re buying from Fairprice, I suggest, 2 packs for this recipe.
Prep time – 10 minutes
Cook time – 20 minutes
Ingredients / Preparations
(1) 35g shallots, remove skin
(2) 25g garlic, remove skin
(3) 10g belacan (about 1 teaspoon)
(4) 20g dried shrimp, soak
(5) 2 fresh red chilli (cut off the top)
(6) 1 pack Kangkong, (cut and wash)
(7) 30g Cooking Oil (about 2 tablespoons)
(8) Salt (to taste)
Regular Instructions
(1) Blend shallots, garlic, belacan, dried shrimp, and red chillies
(2) Sautee the blended mixture with 2 tablespoons of oil, in a large wok
(3) When the mixture is fragrant, add in the kangkong
(4) Mix evenly, and serve hot
Thermomix Instructions:
(1) Add into mixing bowl: shallots, garlic, belacan, dried shrimp, and red chillies
(2) Blend (Speed 6, 10 seconds)
(3) Scrape down the sides of the Thermomix with the spatula
(4) Add 30g cooking oil
(5) Sautee (5minutes, 120g, Reverse blade, Speed Sp)
(6) Add in Kangkong and salt to taste.
(7) Sautee (5minutes, 120g, Reverse blade, Speed Sp)
(8) Serve Hot
