Onion Carrot Chicken Soup – a case of cut it up, and dump it in the thermomix for 30 minutes.

Soups are staples in my household. I cook at least 1 type of soup every week because its versatile, and can be eaten with any choice of staple (you know, like the leftover rice or pasta from yesterday?) If I cook a whole big pot for Muadz (while my husband and I eat something else) then I would freeze the rest of the soup (without veg or proteins) in this big silicone cube that we have, and just warm it up for another day (where I will add fresh veg and proteins). As a family of 3, there will be leftovers for this portion of ingredients for this recipe.

Prep time – 10 minutes
Cook time – 50 minutes
(with thermomix, much of this time is press the settings, and then leave it to cook while you do something else)
Serves 4-5pax

Ingredients / Preparations

(1) Chop 1 big white onion (about 180g) into thin slices
(2) Chop 1 carrot (about 50g) half circle slices
(3) Cut 1 tomato (about 80g) into wedges
(4) Cut 1 Potato (about 150g) into medium sized cubes
(5) Take 30g dried anchovies and rinse it.
(6) 1 chicken stock cube
(7) 500g chicken (use any parts available, usually I use frozen chicken because that’s the most convenient. but if you want this to be more nourishing, use a 250g fresh whole leg of chicken)
(8) White pepper for taste
(9) Spring Onion for garnishing
(10) Your choice of carb – Rice, Pasta or Noodles
*Optional, you can throw in fishballs if you like!

Regular Instructions

(1) Put the rinsed anchovies into a herb bag.
(2) Put 1.5L water into a big pot, and add in the big white onion slices, tomato wedges, 1 chicken stock cube and the herb bag with the rinsed anchovies inside. [yes, more water for this method compared to Thermomix recipe, because there will be more moisture loss when cooked over the stove with a regular pot, compared to Thermomix]
(3) Boil this mixture for 30 minutes at medium heat over the stove.
(4) Remove the herb bag with the anchovies.
(5) Sieve/remove out any ingredients that you don’t want (perhaps your kids dont eat onions, so you can remove that using tongs or sieve)
(6) Add chicken, carrots, potatoes, and let it simmer for another 20 minutes until chicken is cooked.
(7) Add salt and white pepper to taste

Serving
You can serve this with rice, macaroni (or other pasta) or noodles as per your liking 🙂 Usually Muadz and his daddy take this with rice. Mama will always spike hers with chilli padi.

Thermomix Instructions:

(1) Add in Thermomix Mixing Bowl
– Big white onion slices
– Tomato wedges
(2) Put in the Simmering Basket
– Add the rinsed anchovies into the simmering basket, ensuring that it is entirely submerged
– Add in Chicken Stock Cube
(3) Boil (30min / 100 deg / reverse blade / Speed 1)
(4) Remove the simmering basket with the spatula and discard the anchovies.
(5) Add chicken, potatoes and carrots in the simmering basket
(6) Boil (20min / 100 deg / reverse blade / Speed 1) – Until the chicken is cooked
(7) Add salt and white pepper to taste .

Serving
You can serve this with rice, macaroni (or other pasta) or noodles as per your liking 🙂 Usually Muadz and his daddy take this with rice. Mama will always spike hers with chilli padi.
